The Infused Olive Oil Omelet

Recipe: The Infused Olive Oil Omelet Serves 1
Ingredients:
2 tbsp Wild Mushroom & Sage Infused Olive Oil (see combinations below)
¼ cup chopped mushrooms (or your favorite vegetable)
1 tbsp chopped green onion
1 tbsp chopped fresh parsley
3 eggs
2 tbsp grated white cheddar
Instructions:
In a small omelet pan or 8" skillet, warm 1 tbsp of the olive oil over medium heat. Sauté your vegetables until just tender.
Beat eggs with the remaining 1 tbsp olive oil and pour over the vegetables. Let cook for 1 minute, then sprinkle with cheese and fold the omelet in half.
Cook for another minute and serve.
