The Infused Olive Oil Omelet

Some mornings deserve more than a drizzle of plain cooking oil. This simple omelet gets its character from your choice of infused olive oil — and the combination you choose tells the whole story. Use our Wild Mushroom & Sage for something earthy and rich, or reach for Chipotle for a smoky kick that wakes you right up. Five minutes, five ingredients, completely different breakfast every time.

Recipe: The Infused Olive Oil Omelet Serves 1

Ingredients:

  • 2 tbsp Wild Mushroom & Sage Infused Olive Oil (see combinations below)

  • ¼ cup chopped mushrooms (or your favorite vegetable)

  • 1 tbsp chopped green onion

  • 1 tbsp chopped fresh parsley

  • 3 eggs

  • 2 tbsp grated white cheddar

Instructions:

  1. In a small omelet pan or 8" skillet, warm 1 tbsp of the olive oil over medium heat. Sauté your vegetables until just tender.

  2. Beat eggs with the remaining 1 tbsp olive oil and pour over the vegetables. Let cook for 1 minute, then sprinkle with cheese and fold the omelet in half.

  3. Cook for another minute and serve.
