Only the sweetest hand-picked grape clusters are chosen for maximum natural sugar content, then left to dry in the Italian sun for up to 15 days—an old-world artisan method unique to our producer’s family tradition. This careful drying intensifies the grape’s natural sweetness, flavor, and depth before the must is slowly cooked, lightly filtered, and aged in new white oak barrels. The result is a luxuriously smooth balsamic with an exceptional 1.28 density and bright 4% acidity.
