Produced during a short April harvest in Chile, our Green Limonato is made by crushing unripe, estate-grown Arbequina olives together with just-picked green Eureka lemons—grown side by side and harvested in unison. Using this traditional agrumato method, the fresh citrus oils from the lemons naturally fuse with the olive oil during extraction.
The result is a powerfully aromatic, vibrant oil with a distinct green lemon character that is brighter, sharper, and more floral than traditional lemon oils. Its lingering citrus finish makes it especially expressive in fresh, seasonal dishes and fruit-forward applications.
