The Recipe
Crispy Falafel Burgers with Harissa Olive Oil
Makes 4 patties
Ingredients:
1 can chickpeas, drained and patted dry (or 1.5 cups cooked dried chickpeas)
1/4 cup fresh parsley
1/4 cup fresh cilantro
3 cloves garlic
1/2 small onion
1 tsp cumin
1 tsp coriander
1/2 tsp salt
2 tbsp flour or chickpea flour (as needed to bind)
3 tbsp Harissa Infused Olive Oil (for cooking)
4 buns or pitas
Method:
Pulse chickpeas, herbs, garlic, onion, and spices in a food processor until finely chopped but not pureed.
Add flour a little at a time until the mixture holds together when pressed.
Form into 4 patties.
