Hot Habanero Bacon Jam Glazed Pulled Pork Nachos

There's a time and a place for regular nachos. This isn't that time, and this isn't that place. Terrapin Ridge Farms Hot Habanero Bacon Jam gets folded into pulled pork, layered between chips and two cheeses, baked until bubbly, then finished with a drizzle of warm jam that takes everything over the top. Recipe: Hot Habanero Bacon Jam Glazed Pulled Pork Nachos
Serves 4

Ingredients:

  • 1 jar Terrapin Ridge Farms Hot Habanero Bacon Jam

  • 1 lb pulled pork

  • 16 oz corn tortilla chips

  • ½ lb shredded Monterey Jack cheese

  • ½ lb shredded sharp cheddar cheese

  • 4 tbsp scallions, thinly sliced

  • Thinly sliced serrano chiles for garnish

Directions:

  1. Preheat oven to 350°F. In a bowl, combine pulled pork with 6 oz of the Habanero Bacon Jam. Mix well and set aside.

  2. In a separate bowl, combine both shredded cheeses.

  3. In a shallow baking dish, layer 2 oz chips, then 2 oz cheese, then 2 oz of the pork mixture. Repeat layers until all ingredients are used.

  4. Bake for 15 minutes until cheese is melted and lightly golden.

  5. While nachos bake, warm 2 tbsp of the remaining jam in a microwave-safe bowl for about 25 seconds.

  6. Remove nachos from the oven. Drizzle with warm jam, scatter with scallions, and garnish with sliced serranos. Serve immediately with guacamole or sour cream.

Habanero Bacon Jam Guacamole
This two-minute guacamole belongs on everything.

  • 1 ripe avocado

  • 1 tbsp Terrapin Ridge Farms Hot Habanero Bacon Jam

  • Juice of half a lime

  • 1 tsp fresh cilantro, chopped

  • 1 tbsp olive oil

  • Salt and pepper to taste

Mash avocado in a small bowl. Add remaining ingredients and stir to combine. Taste and adjust seasoning. Serve immediately.
