Tropical Tequila Lettuce Wraps

Light, fresh, and genuinely fun to eat — these shrimp lettuce wraps are what warm-weather cooking is all about. Terrapin Ridge Farms Tropical Tequila Sauce pulls double duty as both the marinade and the finishing drizzle, coating the shrimp in a tropical, lightly boozy glaze that caramelizes beautifully when seared hot and fast. Seared pineapple adds sweetness. Quick-pickled red onions add brightness. Bibb lettuce holds it all together. This is the kind of meal that feels like a treat and takes about 30 minutes.

Recipe: Tropical Tequila Lettuce Wraps
Serves 4

Ingredients:

  • 1 jar Terrapin Ridge Farms Tropical Tequila Sauce, divided

  • 1½ lbs raw shrimp, shelled and deveined

  • 1 head Bibb lettuce, leaves separated

  • 2 cups cooked white rice

  • Fresh pineapple, sliced ¼-inch thick

  • Pickled red onions (recipe below)

  • Optional: crushed red pepper

Quick-Pickled Red Onions:

  • 1 red onion, thinly sliced

  • 1½ cups white vinegar

  • 2 tbsp sugar

  • 1 tbsp salt

Instructions:

  1. Make the pickled onions first: Combine vinegar, sugar, and salt in a small saucepan. Stir over medium heat until sugar and salt dissolve. Pack the sliced onion into a clean jar and pour the hot brine over it. Seal and refrigerate — they're ready in 30 minutes and keep for 2 weeks.

  2. Place shrimp in a shallow bowl with half the Tropical Tequila Sauce. Marinate for up to 1 hour in the refrigerator.

  3. Heat a heavy skillet or grill pan over high heat. Add pineapple slices in a single layer and sear without moving until caramelized on the bottom, about 2 minutes. Flip and sear the other side. Remove to a plate.

  4. In the same pan, remove excess marinade from the shrimp and cook in batches — don't crowd the pan or they'll steam instead of sear. Cook without moving until caramelized on one side, then flip and cook through. The sauce on the shrimp will help develop a deep, browned crust.

  5. To assemble: Place a spoonful of rice in each lettuce leaf, add 2–3 shrimp, a piece of seared pineapple, and pickled red onion. Drizzle with additional Tropical Tequila Sauce and serve immediately.
